Best Ever Lemon Cake

I’m not ready for summer to end! I wish it could last forever! I always get a little sad when my kids go back to school. They are growing up way to fast. I’m trying to hold on to the last few days of summer and lemon cake always reminds me of summer time.  This lemon cake is just about as good as it gets! It’s very moist and dense. This is definitely one of my top favorite cake recipes out there. Best ever lemon cake! Enjoy!

Best Ever Lemon Cake

1 1/3 cups sugar

6 tablespoons butter, softened

Zest of 1 lemon

3 tablespoons thawed lemonade concentrate

2 teaspoons vanilla

2 eggs

2 egg whites

2 cups flour

1/2  teaspoon baking powder

1/2  teaspoon baking soda

1/2 teaspoon salt

1 1/4  teaspoon buttermilk

Place sugar, butter, zest,lemonade and vanilla in a mixer and mix until well blended. Add eggs and eggs whites one at at time, beading well after each addition. In a separate bowl, mix dry ingredients and buttermilk until well blended. Pour into two well- greased 9′ round pans or 7″ round pans if you want to make extra layers.( I like to spray my pans when I trace the bottom of my pan on parchment paper and cut a circle to put in the bottom of the pan, the cake never sticks). Bake at 350 degrees for 18 to 20 minutes. Cool in pans for 10  minutes, then remove to a cooling rack.

 

Frosting:

2 tablespoons butter, softened

Zest of 1 lemon

2 tablespoons thawed lemonade concentrate

1/2  teaspoon vanilla

1(8 ounce) package cream cheese, softened

3 1/2 cups powdered sugar

Mix together all ingredients except powdered sugar and blend well. Gradually add powdered sugar and beat at low speed until blended. Don’t over beat. Frost cake.

use sliced lemon as a garnish on top. Happy Baking!
